Here are 6 different GOOD SOUPS (martini recipes) that include seasoning with condiments.
Key tip: Add aromatic condiments such as soy or fish sauce at the end. Dilution and cold temps can soften the way these aromas come through, so adding them last helps keep their flavor and aroma more noticeable.
Recipe:
* Botanist Gin 2.5 oz
* Dry Vermouth 0.5 oz
* 2 bar spoons olive juice
* 1/3 bar spoon soy sauce
I noticed that if the soy sauce goes in before dilution, its aromatics kind of disappear. So I add the soy sauce as the final step to preserve some of the aromatics.
Soy Sauce Martini
Recipe:
* Roku Gin 2oz
* Dry vermouth 0.25oz
* Mezcal 0.25oz ← critical bridge think of it as adding char to grilled fish
* 2 bar spoons olive brine
* 1/3 bar spoon fish sauce
Similar to soy sauce, if the fish sauce is added before dilution, its aromatics kind of disappear. So I add the fish sauce as the final step to preserve them.
Fish Sauce Martini
Sesame Oil Martini
Recipe:
* 3 oz toasted rice infused Roku gin
* toast rice in pan for 5-7min till it’s golden, let the rice cool down before infusion
* infuse 5:1 gin to rice -> 150g to 30g
* Let it sit for 30min, 40min max or the rice starch will start to change the texture of the gin
* 2 bar spoons Noilly Prat extra dry vermouth
* 2 dashes orange bitters
* 2 drops saline ← the bridge; ties the nutty + grain together
* Finished with 3 drops sesame oil
Recipe:
* vodka 2.5oz
* anchovy-olive brine 0.75oz (Iberia Spanish manzanilla olives with anchovy stuffing, use a brine you would be happy to sip on)
* 1 dash Worcestershire sauce
Garnish: expressed lemon peel
Worcestershire Martini
Recipe:
* Fat washed Shacha sauce vodka 1oz
* Mix vodka 120g with Sacha 20g, let sit in room temp for 4 hours then leave it in freezer overnight, strain
* Vodka 1 oz
* Sake (Otokoyama - Tokubetsu Junmai) 0.75oz
* 2 bar spoons of olive brine
* 3 drops vinegar
Dilute then pour

Clear Soy Sauce Martini
A ikebana flower arrangement inspired sake martini recipe:
* 2oz Botanist gin
* 1oz Tokubetsu Honjozo sake
* Splash of dry vermouth
- 3 dashes of orange bitters
Dilution is one of the most key element to a martini, make sure to take your time to stir
Lemon twist then add 1/3 bar spoon of clear soy sauce as the final step.
