Delulu is the Solulu

Kicking off the new year with one of my favorite mantra - Delulu is the Solulu ✨ There’s many ways to interpret this phrase, what does this mean to you? To me, it’s about what you tell your self to stay positive during challenging situations. “Being a bit dreamy or hopeful can be the solution to life’s challenges.”

This is my first jello shot creation and I wanted to play with the concept of “perception” ✨ When you see this, what did you think it will taste like? Without knowing the ingredients, when you see pink did you assume something fruity or sweet? but BOOM its actually chocolate and coffee 😎To balance off the bitterness adding another heavy cream layer then top with some edible gold leaves.

Ingredients:

First white layer
- 4oz of heavy cream
- 0.5oz cocoa liqueur
- 1 tea spoon of Knox unflavored gelatine
2nd pink layer
- 2oz Espresso infused vodka
- 1oz white cocoa liqueur
- 1oz campari
- 3oz dragon fruit water
- 2 tea spoon of Knox unflavored gelatine
- 2 oz hot water

For gelatine, I used the “Knox Unflavoured Gelatine”

Prep the white heavy cream layer first:
1. Add 1 tea spoon of gelatine with 2 tea spoon of cold water and let it sit for 5min (for gelatine to bloom)
2. Pour 1oz of hot water into 1, make sure gelatine is fully dissolved (microwave 10sec if needed)
3. Pour 4oz of heavy cream + 0.5oz cocoa liqueur
4. Pour in container, I used a 5*3.5*2.5 container
5. Eyeball the desired thickness of your first layer
6. Let it sit for 30min in the fridge, this is a critical step. This is when the jello isn’t fully set but forms a top layer enough for you to pour in the 2nd layer without breaking it through. If you let it sit for too long, the 2nd layer won’t stick to the first layer. If you didn’t let it sit long enough, you pour in the 2nd layer, it will break the first layer

While we wait for the first layer to set, let’s prep the 2nd pink layer
1. Add 2 tea spoon of gelatine with 4 tea spoon of cold water and let it site for 5min (for gelatine to bloom)
2. Pour 2oz of hot water into 1, make sure gelatine is fully dissolved (microwave 10sec if needed)
3. Make the dragon fruit water from adding 3 tea spoon into 4oz of water (add more powder if the color is not deep enough)
4. Pour 3oz of dragon fruit water into the gelatine bowl, which will bring down the temperature slightly. Then pour in 2oz vodka+1oz cocoa liqueur+1oz campari (total of 7oz of liquid added to the gelatine bowl)

Assemble when the 30min timer is up, check your first layer, it should be roughly set, gently pour in the 2nd layer from the corner to make sure it doesn’t break. The fill up the container to the desired thickness of your jello shot. Let it sit over night! I once let it sit for 8 hours and it wasn’t enough. Alcohol just have a funny and uncertain way to make gelatine sit. This is a very lengthy process but I enjoyed making it and letting my friends try this at my nye party :)
